The Moghuls were not just connoisseurs of the arts, architecture and literature, but were food aficionados as well. Moghul cuisine is the perfect fusion of persian recipes with spices from all over india. It was not just the richness of food but the style and grandeur with which it was presented, which made the Moghuls a class apart in hospitality.
Moghulai cuisine uses nuts (mainly almonds, cashews, pistachios, walnuts) and makes flavored sauces and butter based curries with them. Many desserts and rice dishes are prepared with dried fruits like raisins to achieve a distinctive taste.
A wide array of meat dishes and bread were prepared in a clay oven popularly known as a tandoor. Living in Canada, I always sought good Moghulai food which would bring back memories of aromatic and exotic meat dishes in the bylanes of Old Delhi or of Hyderabadi Biryani, which has a special place in my heart. Having worked in the hospitality industry for more than a decade, I am happy to bring my passion for good food on a plate.
